‘Book Ends’ Cabernet Sauvignon

Our very best blocks of Mt Barker Cabernet Sauvignon are reserved for the ‘Book Ends’. Most is from the Karri Oak vineyard (adjacent to the winery property) with 12% from the best block on our Langton vineyard. The 2020 vintage was warmer than 2019; we had good growing conditions and especially later in the season when the Cabernet grapes were ripening; the vines were not stressed and maintained their good leaf canopy, so essential for full flavour development. Once harvested, the batches of fruit were all fermented separately with regular pump overs to maximise colour and flavour extraction. A portion was then left on skins post ferment before all being matured in French oak barriques, approx 40% new, for 18 months.  

COLOUR

A very dense dark red with just a touch of dark red brick.

AROMA

It is richly aromatic and very generous on the nose. Has loads of dense, dark fruit aromas eg dark berries & deep ripe plum with some earthiness from the bottle development adding complexity, along with the merest hint of sage. 

PALATE

This is classic cool climate Cabernet Sauvignon from a ripe year. Our 2020 ‘Book Ends’ has the intense fruit flavours so typical of the variety along with its great tannin structure. It has delicious ‘brambly’, dark fruit flavours and red berry characters. The palate is complex and still fresh and well-integrated; the tannins from the fruit and the tannins from the oak provide its excellent structure and contribute to its great palate length. This Cabernet Sauvignon is a great example of the quality of Mount Barker fruit; it's well flavoured and finely structured. With two years maturation in bottle before release it’s approachable now; enjoy with a well flavoured main, or cellar well for a further 6++ years.
