‘Old School’ Chardonnay
Our ‘Old School’ Chardonnay is from specific blocks from our Langton & Hayview vineyards in Mt Barker. The fruit was picked a little after that for our Styx Gully to produce a slightly fuller style of Chardonnay. Predominately barrel fermented (~40% new) it all went through malolactic fermentation to produce a softer, complex, and textured wine.
COLOUR
Bright and clear with a light golden straw colour.
AROMA
Has light melon fruit aromas; think honeydew and rockmelon, along with a delicate creamy cashew nut character and just a hint of butterscotch adding complexity.
PALATE
This is a well-balanced and well-integrated Chardonnay. After 6 months in barrel post fermentation, the melon fruit flavours are well integrated with the subtle oak characters. It was a clean primary ferment so there’s still a lovely freshness to this wine and, as the malolactic fermentation reduces the acidity, it’s soft and generous and imminently drinkable!
Enjoy now with any meal or cellar for a while to allow it to develop more buttery notes and some bottle age complexity.
